In my opinion, so called “molecular gastronomy” focuses on transforming ingredients through special techniques, all in the name of appearances, with little regard to the nutritional value of the end product. By definition, the popular practice changes the very nature of the ingredient, often drastically. Many of these techniques completely obliterate any nutritional value and produce a synthetic, unhealthy end result. In contrast my approach to food starts with produce-driven dishes based on the original flavors of a vast array of ingredients – clean, bright and natural. The depth of Thai culinary heritage is loaded with healthy antioxidants, including dry spices and plantlife of amazing flavorful and aromatic varieties, prepared with specific techniques. Even bitter and astringent ingredients – which are extremely important in ejecting toxins from the body – are elevated to unforgettable flavor and fragrance wholes, which once experienced, you can never imagine life without them.
